Environmental certifications and excellences
ADR spa is certified ISO 9001 / Standard I.F.S. and B.R.C. / ambientale ISO 14001 / RSPO Roundtable on sustainable palm oil for levels Mass Balance and Segregation.
In addition to the ISO 9001 certification, which provides for periodic checks on the overall quality of production processes, from ingredients selection to packaging and from warehouse management to every single stage of production, we decided to further monitor the internal procedures with the IFS and BRC certifications, which provide for a strict increase in quality control.
The IFS Food Standard is a GFSI (Global Food Safety Initiative) recognized standard for auditing food manufacturers. The focus is on food safety and the quality of processes and products. It concerns food processing companies and companies that pack loose food products.
The BRC Global Standard for Food Safety is developed by food industry experts from retailers, manufacturers and food service organisations to ensure it is rigorous and detailed, yet easy to understand.
It provides a framework to manage product safety, integrity, legality and quality, and the operational controls for these criteria in the food and food ingredient manufacturing, processing and packing industry.
Our company is ISO 14001 certified: this means that we monitor the consume of natural resources and the waste management, we make separate collection of waste and we work exclusively with clean energy.
For our products we source only the best ingredients, including the Rainforest Alliance Certified cocoa, a better future for people and nature.
The law of the amaretto
With the Decree of 22 July 2005, jointly adopted by the Ministry of Productive Activities and the Ministry of Agricultural and Forestry Policies, there’s a specific law to protect some of the most known specialities of the Italian pastry tradition. The Decree defines characteristics and composition of the following products: Panettone, Pandoro, Colomba, Savoiardo, Amaretto, Amaretto Morbido. This law observes the traditional recipes and disciplines the productive system in order to improve the product characterization. The name “Amaretto Morbido” is given exclusively to the soft and sweet biscuit with the classic round shape and the cracked top. The product must have a moisture content of at least eight percent. The compulsory ingredients are: sugar (sucrose), apricot almonds (apricot kernels), with fat content above 45%, almonds, which – singularly or in combination – must be not less than the 35% of the total almonds; egg white of chicken egg. (The percentages of the two kind of almonds must be indicated separately). In fact, our recipe is composed by: sugar, apricot kernels (39%), almonds (11%), egg white.
